Do at least two to four sets per muscle group at once. Later then a different muscle group etc.
A couple of sets throughout the day is much better than nothing at all.

Make sure you focus on the bigger muscle group first then go for the smaller.
As others have said, it will decrease your intensity. However, maxing out multiple times a day has been shown to be more beneficial for increasing your strength, so if you want to progress in that way your method would actually be optimal.
That method is called “greasing the grove” and it is great for muscle endurance (increasing the reps) but not so good for muscle growth and strength.

It’s probably better to have one session. Your workouts won’t be intense enough if your rest times are 2 hours between sets.
I don’t mean this to sound rude. Getting into shape and being healthy is awesome. That’s awesome for you. What plans do you have for your weights? I only ask because maybe we can give some extra guidance in what you’re looking to do.
